Instructions

In the same skillet, add the onion, carrots, celery, and garlic. Cook for 5 minutes, stirring occasionally, until the vegetables are softened. Add the tomato paste, Worcestershire sauce, thyme, oregano, rosemary, salt, and black pepper. Cook for 1 minute, stirring constantly. Add the beef broth and stir to combine. Bring to a boil, then reduce the heat and simmer for 3 minutes.

Pour the vegetable mixture over the chuck roast in the slow cooker. Cover and cook on low heat for 8 hours. When the roast is cooked through, remove it from the slow cooker and set aside. In a small bowl, whisk together the cornstarch and cold water. Add the cornstarch mixture to the slow cooker and stir to combine.
