Instructions

To make the gumbo, start by heating the vegetable oil in a large skillet over medium-high heat. Add the onions, celery, bell pepper, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes. Add the thyme, cayenne pepper, and bay leaves and cook for 1 minute more. Add the tomatoes and tomato paste and cook for 2 minutes more. Reduce the heat to low and stir in the flour. Cook for 1 minute, stirring constantly.

Transfer the mixture to a slow cooker and add the chicken broth. Cook on low for 4 hours. Add the cooked shrimp, crawfish, and crab to the slow cooker and cook for an additional hour. Add the okra and parsley and cook for 15 minutes more. The gumbo is ready to serve!

Notes

This gumbo can be served over white rice, or with warm French bread. You can also top it with chopped scallions or diced tomatoes for a flavorful addition. If you would like a thicker gumbo, you can add an additional tablespoon of flour, or mix together 1 tablespoon of cornstarch and 1 tablespoon of water and stir it into the gumbo at the end of cooking.
