Ingredients
- 2 cups uncooked wild rice
- 4 boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup heavy cream
Instructions
1. In a medium bowl, combine the wild rice, chicken broth, onion, red bell pepper, garlic, paprika, thyme, oregano, salt, and pepper. Stir until all the ingredients are combined.
2. Place the chicken breasts in the bottom of the slow cooker. Pour the wild rice mixture over the top of the chicken. Cover the slow cooker and cook on low for 6-8 hours or until the chicken is cooked through.
3. Once the chicken is cooked through, remove the chicken from the slow cooker and shred it into pieces. Return the shredded chicken to the slow cooker and stir in the heavy cream.
4. Cover the slow cooker and cook on low for an additional 30 minutes. Serve warm.

Notes
