Description

Bengali Pulao is a traditional dish in the Indian subcontinent which is a combination of aromatic basmati rice and flavorful vegetables. Ingredients

To make Bengali pulao, you will need the following ingredients: 2 cups of basmati rice, 2 tablespoons of oil, 2 teaspoons of cumin seeds, 2 bay leaves, 2 cloves, 2 cardamom pods, 2 onions (finely chopped), 2 tomatoes (finely chopped), 3-4 green chillies (finely chopped), 1 teaspoon of ginger-garlic paste, 1 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, 1 teaspoon of garam masala, 1 teaspoon of cumin powder, 1 cup of mixed vegetables (carrots, peas, beans, cauliflower), 2 cups of water, salt to taste.

Instructions

1. Soak the basmati rice in water for 15-20 minutes. Drain and keep aside.

2. Heat oil in a pressure cooker. Add cumin seeds, bay leaves, cloves, and cardamom. Saute for a few seconds.

3. Add the chopped onions and sauté until they become golden brown in color.

4. Add the chopped tomatoes, green chillies, ginger-garlic paste, turmeric powder, red chilli powder, garam masala, and cumin powder. Mix well and sauté for a few minutes.

5. Add the mixed vegetables and sauté for another 2-3 minutes.

6. Add the soaked rice, water, and salt to taste. Mix well.

7. Close the lid of the pressure cooker and cook for 3-4 whistles.

8. Turn off the heat and let the pressure cooker cool down.

9. Open the lid of the pressure cooker and fluff the rice.

10. Serve the hot Bengali pulao with raita, salad, and papad.

Equipment

To make this delicious Bengali pulao, you will need a pressure cooker, a spoon, a spatula, and a knife.

Notes

1. If you want to use more vegetables, you can add them as per your preference.

2. You can also add some cashew nuts and raisins for added flavor and texture.

3. You can use ghee instead of oil for extra flavor.

4. You can also add freshly chopped coriander leaves for garnishing.
