Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the beef roast to the skillet and brown for 3-4 minutes on each side. 2. Transfer the beef to the slow cooker. Sprinkle the garlic powder, onion powder, Worcestershire sauce, oregano, basil, thyme, pepper, and salt over the beef. Pour the beef broth over the beef. 3. Cover the slow cooker and cook on low for 8-10 hours, or until the beef is tender. 4. Remove the beef from the slow cooker and shred it with two forks. Reserve 2 cups of the cooking liquid. 5. Heat the broiler. Place the French rolls on a baking sheet and brush with the melted butter. Broil for 1-2 minutes, or until lightly toasted. 6. Place some of the shredded beef on each roll. Top with the grated cheese and the sliced onion. 7. Broil for 2-3 minutes, or until the cheese is melted and bubbly. 8. Make the au jus: In a small saucepan, combine the reserved cooking liquid, Worcestershire sauce, and cornstarch. Whisk until the cornstarch is fully dissolved. Bring to a simmer over medium-high heat and cook for 2-3 minutes, or until thickened. 9. To serve, spoon the au jus over the sandwiches. Serve immediately.

Notes

You can use any type of cheese you like for this recipe - cheddar, Swiss, Gruyere, or a mix! This recipe can easily be doubled or tripled to feed a crowd. Leftover shredded beef and au jus can be stored in the refrigerator for up to 4 days.
