- 2 tablespoons fresh thyme, chopped

- Salt and pepper, to taste

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Season the lamb shanks with salt and pepper, then coat with the flour. Add the shanks to the skillet and cook for 3-4 minutes per side, or until golden brown. Transfer the shanks to the slow cooker.

2. Add the onion and garlic to the skillet and cook until the onion is softened, about 5 minutes. Add the tomato paste and cook for 1 minute, stirring constantly. Add the diced tomatoes, chicken broth, Worcestershire sauce, honey, thyme, oregano, smoked paprika, and cumin. Bring to a boil, then reduce the heat to low and simmer for 5 minutes.

3. Pour the sauce over the shanks in the slow cooker. Cover and cook on low heat for 6-8 hours, or until the shanks are tender and cooked through. Remove the shanks from the slow cooker and transfer to a serving platter.

4. To serve, sprinkle with fresh parsley, oregano, and thyme. Season with salt and pepper, to taste. Serve with your favorite sides.
