Ingredients

For this slow cooker chilli recipe, you'll need: 2 tablespoons of olive oil, 1 large onion, diced, 2 cloves of garlic, finely chopped, 1 red chilli, finely chopped, 2 tablespoons of smoked paprika, 2 tablespoons of ground cumin, 1 teaspoon of dried oregano, 1 teaspoon of ground coriander, 1 bay leaf, 500g of minced beef, 2 tablespoons of tomato purée, 2 x 400g tins of chopped tomatoes, 1 tablespoon of Worcestershire sauce, 200ml of beef stock and 2 x 400g tins of red kidney beans, drained and rinsed.

Instructions

To make this slow cooker chilli recipe, start by heating the oil in a large saucepan and adding the onion, garlic and chilli. Cook for 5 minutes until softened, then stir in the spices and bay leaf. Add the minced beef and cook for a further 5 minutes, stirring to break up any lumps. Next, add the tomato purée, chopped tomatoes, Worcestershire sauce and beef stock and bring to the boil. Once boiling, reduce the heat and simmer for 10 minutes, stirring occasionally. Transfer the mixture to the slow cooker and add the beans. Cook on High for 4-5 hours or Low for 8-10 hours. When the chilli is cooked, remove the bay leaf and season to taste. Serve with your favourite accompaniments.
