Boston beans are a hearty and comforting dish that is easy to prepare and can be served as a main dish or a side. This slow cooker version of the traditional recipe is full of flavor, requires minimal effort, and yields delicious results. This recipe includes bacon, onion, and a variety of seasonings that combine to create a complex and savory flavor that pairs perfectly with warm crusty bread or a side of mashed potatoes.

Ingredients

  • 4 slices of bacon, cut into 1/4 inch pieces
  • 1 large onion, diced
  • 1 teaspoon of garlic powder
  • 2 teaspoons of dried oregano
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of ground black pepper
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cloves
  • 1/2 cup of ketchup
  • 1/4 cup of molasses
  • 1/4 cup of brown sugar
  • 1/4 cup of white vinegar
  • 2 tablespoons of Worcestershire sauce
  • 2 (15 ounce) cans of navy beans, drained and rinsed

Instructions

To begin, add the bacon to a large skillet and cook over medium-high heat until crisp and all of the fat has been rendered out. Remove the bacon with a slotted spoon and set aside. Add the onion to the bacon fat and cook until softened and lightly browned, about 5 minutes. Add the garlic powder, oregano, thyme, black pepper, nutmeg, and cloves to the skillet and cook for 1 more minute.

In a slow cooker, combine the cooked bacon and onion, ketchup, molasses, brown sugar, vinegar, and Worcestershire sauce. Stir to combine and add the navy beans. Gently stir everything together and cover the slow cooker. Cook on low for 6-7 hours or on high for 3-4 hours, stirring once or twice during cooking.

When the beans have finished cooking, remove the lid and stir the beans. If the sauce is too thick, add a little water or chicken stock and stir to combine. Taste and adjust the seasonings, if needed. Serve the beans warm with your favorite side dishes.

Equipment

  • Large Skillet
  • Slow Cooker
  • Slotted Spoon

Notes

This recipe can easily be doubled or tripled to serve a larger crowd. If you do not have a slow cooker, you can prepare the beans in a heavy-bottomed pot on the stove. Place the ingredients in the pot, cover, and simmer for about one hour, stirring occasionally. You may need to add a little extra liquid if the beans become too dry.
