Description

Cream scones are a delicious breakfast treat that can be enjoyed with tea or coffee. Not only are they light and fluffy, but they are also incredibly easy to make. The best part is that you don’t need any fancy ingredients to make them. All you need is a few simple ingredients that you probably already have in your pantry. Once you have all the ingredients ready, you can whip up a batch of cream scones in no time.

Ingredients

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) cold butter, cut into cubes
1/2 cup heavy cream
1/2 cup buttermilk
1/4 cup sugar
1 teaspoon vanilla extract
Optional: 1/4 cup raisins, dried cranberries, or other dried fruit

Equipment

Baking sheet
Pastry blender
Mixing bowls
Measuring cups and spoons
Rubber spatula
Cookie cutter or knife

Instructions

1. Preheat the oven to 375°F. Grease a baking sheet and set aside.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. Cut the butter into the flour mixture using a pastry blender or two knives until the mixture resembles coarse meal. (You can also use your fingers to rub the butter into the flour mixture.)
4. In a separate bowl, whisk together the cream, buttermilk, and vanilla extract.
5. Make a well in the center of the flour mixture and pour in the liquid ingredients. Stir until just combined. (Do not overmix!)
6. Add the dried fruit, if desired. Gently fold the fruit into the dough.
7. Turn the dough out onto a lightly floured work surface and knead it until it just comes together. (Do not overwork the dough!)
8. Roll the dough out to a thickness of 1/2 inch. Cut out the scones using a cookie cutter or knife. Place the scones on the prepared baking sheet.
9. Bake the scones for 15-20 minutes, or until golden brown. Remove from the oven and let cool.

Notes

If you don’t have buttermilk, you can use regular milk instead. Just add 1 tablespoon of lemon juice or white vinegar to 1 cup of milk and let it sit for 5 minutes before using.
If you don’t have a pastry blender, you can use two knives or even your fingers to cut the butter into the flour mixture.
The scones can be stored in an airtight container for up to 3 days.
