This is a delicious slow cooker recipe for sweet and savory pineapple pork chops. The pork chops are cooked in a slow cooker with a pineapple juice and soy sauce mixture, making them juicy and flavorful. The pork chops are served with a side of steamed vegetables and a sweet pineapple sauce.

Ingredients

For the pork chops:

• 4 pork chops

• 1 tablespoon of olive oil

• 2 cloves of garlic, minced

• 1/2 cup of pineapple juice

• 1/4 cup of soy sauce

• 1/2 teaspoon of ground black pepper

• 2 tablespoons of honey

• 1/4 teaspoon of ground ginger

• 1/4 teaspoon of ground cinnamon

• 2 tablespoons of fresh cilantro, chopped


For the pineapple sauce:

• 1/2 cup of pineapple juice

• 2 tablespoons of honey

• 2 tablespoons of soy sauce

• 1/4 teaspoon of ground ginger

• 1/4 teaspoon of ground cinnamon

• 1 tablespoon of cornstarch

• 1/4 cup of water

• 2 tablespoons of fresh cilantro, chopped


For the side dish:

• 2 cups of steamed vegetables of your choice (such as carrots, broccoli, or green beans)

• 2 tablespoons of olive oil

• 1/2 teaspoon of salt

• 1/4 teaspoon of ground black pepper

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 5 minutes per side, or until golden brown. Transfer the pork chops to the slow cooker.

2. In a small bowl, whisk together the pineapple juice, soy sauce, black pepper, honey, ginger, and cinnamon. Pour the mixture over the pork chops in the slow cooker. Add the cilantro and stir.

3. Cook on low for 6-8 hours, or until the pork chops are cooked through and tender.

4. To make the pineapple sauce, whisk together the pineapple juice, honey, soy sauce, ginger, and cinnamon in a small saucepan. Bring to a boil. In a small bowl, whisk together the cornstarch and water. Slowly whisk the cornstarch mixture into the saucepan and continue to whisk until the sauce thickens. Remove from heat and stir in the cilantro.

5. To make the side dish, heat the olive oil in a large skillet over medium-high heat. Add the steamed vegetables and season with salt and pepper. Cook for 5 minutes, stirring occasionally, until the vegetables are tender.

6. Serve the pork chops with the pineapple sauce and steamed vegetables. Enjoy!

Notes

• If you don’t have fresh cilantro, you can substitute with dried cilantro. Just use 1 teaspoon of dried cilantro instead of 2 tablespoons of fresh cilantro.

• If you don’t have pineapple juice, you can substitute with orange juice or apple juice.

• If you don’t have soy sauce, you can substitute with tamari or coconut aminos.

• If you don’t have fresh pineapple, you can substitute with canned pineapple. Just drain the canned pineapple before adding to the slow cooker.
