Ingredients

2 large boneless skinless chicken breasts
1 cup Italian style bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
3 tablespoons olive oil
1 (14.5 ounce) can diced tomatoes
1/4 cup chicken broth
1/4 cup red wine
2 tablespoons chopped fresh parsley
1/4 cup shredded mozzarella cheese
3 tablespoons grated Parmesan cheese

Instructions

1. Cut the chicken breasts into cubes and place in a bowl.
2. In a separate bowl, mix together the bread crumbs, Parmesan cheese, garlic powder, oregano, basil and salt.
3. Drizzle the olive oil over the chicken cubes and toss to coat.
4. Dip the chicken cubes into the bread crumb mixture and coat evenly.
5. Place the chicken cubes into the pressure cooker and pour in the diced tomatoes, chicken broth, and red wine.
6. Secure the lid on the pressure cooker and cook over high heat for 15 minutes.
7. When the timer goes off, release the pressure and open the lid.
8. Preheat the oven to 350 degrees F.
9. Transfer the chicken and sauce to a baking dish.
10. Sprinkle the parsley, mozzarella, and Parmesan cheese over the top.
11. Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.

Equipment

For this recipe you will need a pressure cooker, a medium bowl, a small bowl, a baking dish, and measuring spoons.

Notes

You can use any type of canned tomatoes for this recipe. If you prefer a spicier dish, you can use diced tomatoes with green chilies or diced tomatoes with jalapenos. For a milder dish, you can use plain diced tomatoes. You can also substitute the red wine for white wine or chicken broth if desired.
