Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the beef chuck roast and cook until it is browned, about 5 minutes per side. Transfer the beef to the slow cooker.

2. Add the onion, bell peppers, garlic, tomatoes, oregano, cumin, smoked paprika, salt, and pepper to the slow cooker. Stir to combine.

3. Add the red wine vinegar and bay leaves. Cover and cook on low for 8 hours.

4. Remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker and stir to combine.

5. Serve the ropa vieja with cooked white rice.

Notes

If you don't have a slow cooker, you can still make this dish. Simply follow steps 1 and 2, then transfer the mixture to a large pot. Cover and cook over low heat for about 3 hours, or until the beef is tender. Then proceed with steps 4 and 5.
