Description

The beef is slow cooked to perfection resulting in tender, succulent chunks of beef. The rich, flavourful sauce is a combination of garlic, onion, tomato, Worcestershire sauce and more. This comforting stew is served with mashed potatoes or crusty bread, making it a complete meal.

Ingredients

2 tablespoons of olive oil

2 onions, diced

3 cloves of garlic, minced

2 carrots, diced

2 celery stalks, diced

1 kilogram of chuck steak, cubed into 2 cm pieces

2 tablespoons of tomato paste

1 tablespoon of Worcestershire sauce

2 cups of beef stock

1 teaspoon of dried thyme

1 teaspoon of smoked paprika

Salt and pepper to taste

2 tablespoons of cornstarch

2 tablespoons of cold water

Instructions

1. Heat the olive oil in a large frying pan over medium heat.

2. Add the onions, garlic, carrots and celery and cook for 5 minutes, stirring occasionally.

3. Add the cubed beef and cook until browned.

4. Add the tomato paste, Worcestershire sauce, beef stock, thyme and smoked paprika and season with salt and pepper.

5. Transfer the mixture to the slow cooker and cook on low for 6-8 hours.

6. In a small bowl, mix together the cornstarch and cold water. Slowly add the mixture to the slow cooker and stir to combine.

7. Cook for a further 30 minutes or until the sauce has thickened.

8. Serve with mashed potatoes or crusty bread.

Notes

The beef can be replaced with lamb or pork.

For a vegetarian version, replace the beef with mushrooms or lentils.

The stew can be stored in an airtight container in the refrigerator for up to 3 days.

It can also be frozen for up to 3 months.
