Ingredients

For this recipe you will need 2 pounds of beef stew meat, 2 tablespoons of olive oil, 1 yellow onion, 3 cloves of garlic, 1 pound of mushrooms, 2 carrots, 2 tablespoons of tomato paste, 1 cup of red wine, 1 teaspoon of dried thyme, and 2 cups of beef broth. You will also need salt, pepper, and fresh parsley to taste.

Instructions

Start by heating the olive oil in a large skillet over medium-high heat. Add the beef stew meat and season with salt and pepper. Cook until the beef is browned, about 5 minutes. Remove the beef from the skillet and set aside.

Next, add the onion, garlic, mushrooms, and carrots to the skillet and season with salt and pepper. Cook until the vegetables are softened, about 5 minutes. Add in the tomato paste and cook for another minute.

Add the red wine to the skillet and deglaze the pan, scraping up any browned bits from the bottom. Add the thyme, beef broth, and cooked beef to the slow cooker. Cover and cook on low for 8 hours.

Notes
