Ingredients

- 2 teaspoons dried thyme

- 2 bay leaves

- 2 pounds potatoes, peeled and diced

- 1 (32 ounce) jar sauerkraut, drained

- Salt and pepper, to taste

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the kielbasa slices and cook until lightly browned, about 5 minutes. Remove the kielbasa from the skillet and set aside.

2. Add the onion and garlic to the skillet and cook until the onion is soft and translucent, about 5 minutes. Add the chicken broth, caraway seeds, oregano, thyme, and bay leaves to the skillet and stir to combine. Bring the mixture to a boil, reduce the heat to low, and simmer for 10 minutes.

3. Spray the inside of a 6-quart slow cooker with cooking spray. Place the kielbasa, potatoes, and sauerkraut in the slow cooker. Pour the chicken broth mixture over the top. Cover and cook on low for 6 to 8 hours.

4. Season with salt and pepper to taste before serving.
