Ingredients

For the idlis:

• 2 cups semolina (rava)

• 1/2 cup curd

• 1/2 teaspoon baking soda

• 1 teaspoon sugar

• 2 tablespoons chopped coriander leaves

• 1/4 teaspoon ginger-garlic paste

• 2 tablespoons grated coconut

• Salt to taste


For the tempering:

• 2 tablespoons oil

• 1 teaspoon mustard seeds

• 1 teaspoon cumin seeds

• 1 teaspoon urad dal

• 1 teaspoon chana dal

• 1 teaspoon sesame seeds

• 2 green chilies, chopped

• 2 dry red chilies, broken into pieces

• A pinch of asafoetida

• Curry leaves, a few

Instructions

1. In a bowl, mix together the semolina, curd, baking soda, sugar, coriander leaves, ginger-garlic paste, coconut, and salt. Add enough water to make a thick batter. Cover and keep aside for 15 minutes.

2. Heat the oil in a pan. Add the mustard seeds, cumin seeds, urad dal, chana dal, sesame seeds, green chilies, red chilies, asafoetida, and curry leaves. Fry for a few minutes until the mustard seeds begin to splutter.

3. Add the tempering to the semolina batter and mix well.

4. Grease an idli steamer with oil. Pour the batter into the moulds and steam for 10 minutes or until cooked through. Insert a toothpick to check if the idlis are cooked through.

5. Remove the idlis from the moulds and serve hot with chutney or sambar.
