Ingredients

For the dough:
- 4 cups all purpose flour

- 1/2 cup diced onions
- 2 tablespoons butter

For the topping:
- 1/4 cup melted butter
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley

Instructions

1. In a large bowl, combine the flour, salt, and vegetable oil. Gradually stir in the warm water until the dough begins to form. Knead the dough on a lightly floured surface until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

2. To make the filling, combine the potatoes, cheese, onions, butter, parsley, garlic powder, salt, and pepper in a medium bowl. Mix until everything is evenly combined.

3. To assemble the pierogi, roll the dough out on a lightly floured surface until it is about 1/8-inch thick. Cut out circles using a biscuit cutter or drinking glass. Place a tablespoon of the filling in the center of each circle. Fold the dough over and press the edges together to seal. Place the pierogi in the slow cooker.

4. To make the topping, combine the melted butter, parmesan cheese, and parsley in a small bowl. Drizzle the topping over the pierogi in the slow cooker.

5. Cover the slow cooker and cook on low for 4-5 hours, or until the pierogi are cooked through. Serve warm.

Notes
