2 pounds stew meat

2 bay leaves

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

2 cups carrots, diced

2 cups potatoes, diced

2 cups mushrooms, sliced

1 cup frozen peas

Instructions

1. Heat the olive oil in a large skillet over medium high heat. Add the stew meat and cook until lightly browned on all sides, about 5 minutes.

2. Add the onion, garlic, salt and pepper and cook until the onion is softened, about 5 minutes.

3. Transfer the meat and vegetables to a slow cooker. Add the beef broth, red wine, tomato paste, Worcestershire sauce, bay leaves, thyme and oregano and stir to combine.

4. Cover and cook on low heat for 8-10 hours.

5. Add the carrots, potatoes, mushrooms and peas and cook for an additional 1-2 hours.

6. Taste and adjust seasonings if desired.

7. Serve over cooked egg noodles or with crusty bread.
