Ingredients

For this recipe, you'll need: 2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 3/4 cup unsalted butter, 1 1/2 cups sugar, 3 large eggs, 1 teaspoon vanilla extract, 1 cup buttermilk.

Instructions

Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan, and set aside. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing after each addition. Add the vanilla and mix until combined. Alternately add the dry ingredients and the buttermilk, beginning and ending with the dry ingredients. Pour the batter into the prepared pan and spread evenly. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Equipment

You will need a 9-inch round cake pan, a medium bowl, a whisk, and a stand mixer fitted with the paddle attachment.

Notes

For best results, use a light-colored pan. Dark-colored pans will cause the cake to brown too quickly. To prevent the cake from sticking to the pan, be sure to grease and flour it thoroughly. Allow the cake to cool completely before adding frosting or other decorations.
