The biryani is made with layers of chicken and basmati rice, along with a variety of spices, vegetables, and herbs. It is perfect for a special occasion or a weekend dinner. Ingredients

  • 1 kg chicken, cut into small pieces
  • 3 cups basmati rice, soaked for 30 minutes
  • 2 onions, thinly sliced
  • 2 tomatoes, thinly sliced
  • 2 green chillies, finely chopped
  • 1 teaspoon ginger garlic paste
  • 2 tablespoons yogurt
  • 1 teaspoon red chilli powder
  • 1 teaspoon garam masala powder
  • 2 tablespoons oil
  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 2 cloves
  • 2 cardamom pods
  • 1 bay leaf
  • 2 cups water
  • Salt, to taste
  • Chopped coriander leaves, to garnish

Instructions

1. Place the chicken pieces in a bowl and add the yogurt, red chilli powder, ginger garlic paste, garam masala powder, and salt. Mix everything together and set aside for 15 minutes.

2. Heat the oil and ghee in a pressure cooker over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the cloves, cardamom pods and bay leaf and fry for a few seconds.

3. Add the onion and fry until they turn golden brown. Add the tomatoes and fry until they turn soft. Add the marinated chicken and fry until the chicken turns brown.

4. Add the turmeric powder, coriander powder, and salt. Fry for a few minutes and then add the soaked basmati rice. Fry for a few more minutes until the rice is well coated with the spices.

5. Add the water and bring it to a boil. Close the lid of the pressure cooker and cook until the first whistle. Reduce the heat to low and cook for 5 minutes. Turn off the heat and let the pressure release naturally.

6. Open the lid of the pressure cooker and fluff the biryani with a fork. Garnish with chopped coriander leaves and serve hot with raita.

Notes
