Ingredients
2-3 lb chuck pot roast
1 onion, diced
3 carrots, diced
3 stalks of celery, diced
3 cloves of garlic, minced
2 tablespoons of Worcestershire sauce
2 tablespoons of tomato paste
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
1 teaspoon of dried oregano
1 cup of beef broth
Salt and pepper to taste
Instructions
Place the chuck roast into the slow cooker. Add the diced onion, carrots, celery, and garlic on top of the roast. In a small bowl, mix together the Worcestershire sauce, tomato paste, thyme, rosemary, and oregano. Pour the mixture over the top of the roast. Pour the beef broth over the roast and vegetables. Cover the slow cooker and cook on low for 8-10 hours. When the roast is finished cooking, remove it from the slow cooker and let it rest for 15-20 minutes before slicing. Slice the roast against the grain and serve with the vegetables.
