Ingredients

1 pound of lean ground beef
1 can (14.5 ounces) of beef broth
1 can (14.5 ounces) of diced tomatoes
1 onion, chopped
3 cloves of garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 teaspoon of dried oregano
1 teaspoon of dried basil
1/2 teaspoon of dried thyme
Salt and pepper, to taste
Optional: 1/2 cup of frozen peas or corn

Instructions

1. Place the ground beef in the slow cooker. Add the beef broth, diced tomatoes, onion, garlic, carrots, and celery. Stir to combine.
2. Sprinkle the oregano, basil, and thyme over the top. Add salt and pepper, to taste.
3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the beef is cooked through and the vegetables are tender.
4. If using, add the frozen peas or corn during the last 30 minutes of cooking.
5. Serve hot with your favorite sides. Enjoy!

Notes

Be sure to use lean ground beef for this recipe. If you don’t have any beef broth on hand, you can substitute with chicken or vegetable broth. Feel free to add any other vegetables you have on hand. You can also substitute the oregano, basil, and thyme with 1 tablespoon of Italian seasoning.
