Ingredients

2 tablespoons of oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground coriander
2 teaspoons ground cumin
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground ginger
1 teaspoon chili powder
1 teaspoon of salt
2 cups of cooked turkey, chopped into small pieces
1 can of coconut milk
1 can of diced tomatoes
1 can of chickpeas, drained and rinsed
2 cups of diced vegetables, such as carrots, peppers, and potatoes
1/4 cup of freshly chopped cilantro, plus more for garnish
Juice of 1 lime
Plain yogurt, for garnish (optional)
Rice, for serving (optional)

Instructions

1. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, coriander, cumin, garam masala, turmeric, ginger, chili powder, and salt. Cook for 5 minutes, stirring frequently, until the onion is softened and the spices are fragrant. 2. Transfer the onion and spice mixture to the slow cooker. Add the turkey, coconut milk, diced tomatoes, chickpeas, and diced vegetables. Stir to combine. 3. Cover and cook on low for 6-8 hours, or on high for 4-6 hours. 4. When the curry is finished cooking, stir in the cilantro and lime juice. Taste and adjust the seasoning, if necessary. 5. Serve the curry with rice, if desired. Top with a dollop of plain yogurt and some fresh cilantro, if desired.
