Instructions

Start by rinsing and sorting the beans. Once they are rinsed and sorted, place them in a large bowl and cover them with cold water. Soak the beans overnight, or for at least 8 hours. The next day, drain and rinse the beans, and set aside.

In a large slow cooker, add the onion and garlic. Add the chili powder, cumin, paprika, oregano, cayenne pepper, salt and pepper. Pour in the vegetable broth, and stir to combine. Add the drained beans, diced tomatoes, tomato sauce, and diced green chiles. Stir to combine.

Cover and cook on low for 8-10 hours, or until the beans are tender. When the chili is finished cooking, adjust the seasoning to taste. Serve with a side of warm cornbread, or your favorite toppings like cheese, sour cream, and sliced jalapenos.
