Cooking with kids is a great way to encourage them to eat more healthily and also to help them gain valuable life skills. It can be a great bonding experience, too! Here are some simple recipes that kids can make with minimal help from adults.
Fried Rice
Description
This delicious fried rice is easy to make and can be customized with whatever vegetables you have on hand. It's a great way to get your kids to eat more vegetables!
Ingredients
1 tablespoon vegetable oil
2 cloves garlic, minced
1 small onion, diced
1 cup frozen peas and carrots
2 cups cooked rice
1 tablespoon soy sauce
1 teaspoon sesame oil
2 eggs, lightly beaten
Salt and pepper, to taste
Instructions
1. Heat the vegetable oil in a large skillet over medium heat. Add the garlic and onion and cook until the onion is softened, about 5 minutes.
2. Add the frozen peas and carrots and cook for an additional 3 minutes.
3. Add the cooked rice and stir to combine. Cook for 3 minutes.
4. Add the soy sauce and sesame oil and stir to combine. Cook for an additional 2 minutes.
5. Push the rice mixture to the side of the skillet and add the eggs. Cook until lightly scrambled, about 2 minutes.
6. Combine the eggs with the rice mixture and stir to combine. Cook for an additional 2 minutes.
7. Season with salt and pepper, to taste. Serve warm.

Notes
This recipe can be easily customized with whatever vegetables you have on hand. Try adding bell peppers, zucchini, or mushrooms. You can also add cooked chicken, shrimp, or tofu if desired.
