Ingredients

For this easy rice cooker chicken curry recipe, you will need: 2 tablespoons of vegetable oil, 1 large onion, finely chopped; 2 cloves of garlic, minced; 2 teaspoons of ground coriander; 2 teaspoons of ground cumin; 2 teaspoons of garam masala; 1 teaspoon of turmeric; 1-2 tablespoons of tomato purée; 1kg of chicken thighs, cut into small cubes; 400ml of coconut milk; 2 tablespoons of freshly chopped coriander (optional); salt and pepper, to taste.

Instructions

Firstly, heat the oil in the rice cooker and add in the onion, garlic, ground coriander, ground cumin, garam masala, and turmeric. Cook for 5 minutes, stirring occasionally, until the onion is softened. Then, add the tomato purée and chicken and cook for a further 5 minutes. Next, add the coconut milk and bring to a simmer. Cover the rice cooker, set the timer for 30 minutes, and let the curry cook. Once the timer goes off, check the chicken is cooked through. If not, set the timer for a further 5 minutes and check again. Once the chicken is cooked, stir in the freshly chopped coriander, season with salt and pepper, and serve.
