Murgh Makhani (Butter Chicken)

Murgh Makhani, also known as Butter Chicken, is a classic North Indian dish that's loved all across the country. It's made with a creamy tomato-based sauce and tender chunks of chicken. This dish is usually served with naan, roti, or steamed rice.

Ingredients

For the marinade:
- 1 kg boneless chicken, cut into medium-sized pieces
- 2 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 3 tbsp yogurt
- Salt, to taste

For the sauce:
- 2 tbsp ghee or butter
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 2 tbsp cream
- 2 tbsp butter
- Salt, to taste

Instructions

1. Start by marinating the chicken. In a large bowl, mix together the ginger-garlic paste, red chili powder, garam masala, coriander powder, yogurt, and salt. Add the chicken and mix until it is fully coated. Cover the bowl and let it marinate for at least one hour.

2. Heat the ghee or butter in a large pan or wok over medium-high heat. Add the chopped onions and fry until they are golden brown. Add the ginger-garlic paste and fry for a few minutes.

3. Add the chopped tomatoes, red chili powder, garam masala, and coriander powder. Fry for a few minutes until the tomatoes are soft.

4. Add the marinated chicken and fry for a few minutes. Reduce the heat to low and cover the pan. Let the chicken cook for about 10 minutes or until it is cooked through.

5. Add the cream and butter and mix until everything is combined. Let it simmer for a few minutes, then turn off the heat. Serve the Murgh Makhani with naan, roti, or steamed rice.
