Cooking Light Eggnog Recipe
Description
Eggnog is a classic holiday drink made from eggs, milk, sugar, and spices. It is traditionally served cold, but can be served hot. Ingredients
1 cup nonfat milk
1/2 cup fat-free evaporated milk
2 large eggs
2 tablespoons white sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon vanilla extract
Instructions
In a medium saucepan, combine the nonfat milk and evaporated milk. Heat the mixture over medium heat, stirring occasionally, until it just begins to simmer. Do not let the mixture boil. Remove the saucepan from the heat and let cool for about 10 minutes.
In a medium bowl, whisk together the eggs and sugar until light and fluffy. Slowly add the cooled milk mixture to the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon. Do not let the mixture boil.
Remove the saucepan from the heat and stir in the cinnamon, nutmeg, and vanilla extract. Pour the mixture into a bowl and cover with plastic wrap. Let chill in the refrigerator for at least 2 hours before serving.

Notes
