Ingredients

  • 1/2 cup almond flour
  • 1/2 cup hazelnut flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, diced
  • 2 tablespoons cold water
  • 3 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon freshly grated lemon zest
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

Preheat the oven to 375°F. Grease a 9-inch pie plate with butter or non-stick cooking spray.

To make the crust, mix together the almond flour, hazelnut flour, sugar, and salt in a medium bowl. Cut the butter into the flour mixture using a pastry cutter or two knives, until the mixture resembles coarse crumbs. Add the cold water and mix until the dough comes together. Press the dough into the greased pie plate and crimp the edges. Place the crust in the refrigerator while you prepare the filling.

To make the filling, combine the blueberries, sugar, flour, lemon zest, cinnamon, nutmeg, and cloves in a medium bowl. Mix until the blueberries are evenly coated. Pour the filling into the prepared pie crust.

To make the lattice crust, roll out the remaining dough on a lightly floured surface. Cut the dough into strips and layer them on top of the filling in a lattice pattern. Trim the excess dough and crimp the edges. Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling. Allow the pie to cool before serving.
