Instructions

1. Heat the olive oil in a large paella pan or skillet over medium heat. Add the onion, bell peppers, garlic, paprika, and saffron, and cook until the vegetables are softened, about 5 minutes.



2. Add the rice and stir until it is coated with the oil and spices. Pour in the chicken broth, stir to combine, and bring to a boil. Reduce the heat to low and simmer until the rice is cooked and most of the liquid has been absorbed, about 15 minutes.



3. Increase the heat to medium and add the chorizo, shrimp, peas, and olives. Cook until the shrimp are cooked through and the chorizo is crisp, about 5 minutes.



4. To serve, garnish with the parsley, cilantro, and mint and serve with lemon wedges.

Notes
