For the stir-fried pork and barley, you will need: 2 tablespoons vegetable oil, 1 pound pork tenderloin, cut into 1/2-inch cubes, 1 onion, diced, 1 red bell pepper, diced, 1/4 cup dark brown sugar, 1 teaspoon grated fresh ginger, 1/2 teaspoon ground coriander, 1/4 teaspoon ground cumin, 1/4 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, 2 cloves garlic, minced, 1 cup pearl barley, 2 cups chicken broth, 1/2 cup frozen peas, and 1/4 cup chopped fresh cilantro.

Instructions

To make the macaroni and cheese, preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook until al dente, about 8 minutes. Drain and set aside. In a medium saucepan, melt the butter over medium heat. Add the flour, garlic powder, and onion powder and stir until combined. Slowly whisk in the milk and Worcestershire sauce and bring to a simmer. Stir in the cheddar and Parmesan cheeses and the pepper and stir until the cheese is melted. Add the cooked macaroni and stir until combined. Pour the mixture into a 9x13-inch baking dish and bake for 25 minutes, until the cheese is bubbly and golden brown.

To make the stir-fried pork and barley, heat the oil in a large skillet over medium-high heat. Add the pork and cook until browned, about 5 minutes. Add the onion and bell pepper and cook until softened, about 5 minutes. Stir in the brown sugar, ginger, coriander, cumin, allspice, cinnamon, cloves, and garlic and cook until fragrant, about 1 minute. Add the barley and stir to combine. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer until the barley is tender, about 20 minutes. Stir in the peas and cilantro and cook until heated through, about 5 minutes.

Equipment

You will need a large pot, a medium saucepan, a 9x13-inch baking dish, a large skillet, and a wooden spoon.
