Ingredients

2 pounds beef cheeks, trimmed
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon smoked paprika
2 cups beef broth
1 tablespoon tomato paste
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
Salt and pepper, to taste

Instructions

1. Heat a pressure cooker over medium-high heat and add the olive oil.
2. Once the oil is hot, add the beef cheeks and brown on each side for about 5 minutes. Once the beef cheeks are browned, remove them from the pressure cooker and set aside.
3. Add the onion and garlic to the pressure cooker and cook until the onion is softened, about 5 minutes.
4. Add the thyme, smoked paprika, beef broth, tomato paste, and Worcestershire sauce to the pressure cooker. Stir until combined.
5. Return the beef cheeks to the pressure cooker and stir to combine.
6. Close the lid of the pressure cooker and cook on high pressure for 45 minutes.
7. Once the time is up, let the pressure naturally release for 10 minutes before opening the lid.
8. Once the pressure has been released, open the lid and check the beef cheeks to make sure they are tender. If not, close the lid and cook for an additional 5-10 minutes.
9. Serve the beef cheeks with mashed potatoes or rice and enjoy!

Notes
