Ingredients
- 2 wild ducks, skinned and cleaned
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
1. Place the ducks in the slow cooker. In a small bowl, mix together the onion, garlic, carrots, celery, chicken broth, thyme, oregano, rosemary, black pepper and salt. Pour the mixture over the ducks.
2. Cook on low for 6-8 hours, or until the ducks are cooked through and the meat is tender and falling off the bones. Remove the ducks from the slow cooker and let rest for 10 minutes before serving.
3. To serve, place the duck on a platter and spoon some of the cooking liquid over the top. Serve with your favorite sides.

Notes
For best results, use a wild duck that has been aged for at least two days. This will help to tenderize the meat and make it more flavorful.
