Ingredients

2 slices of bacon, diced
1 small onion, diced
2 cloves of garlic, minced
2 cups of dried black-eyed peas, rinsed and drained
3 cups of chicken or vegetable broth
2 teaspoons of smoked paprika
1 teaspoon of chili powder
1 teaspoon of ground cumin
1 teaspoon of garlic powder
Salt and pepper to taste
Optional: Hot sauce, for serving

Instructions

1. Set the pressure cooker to the sauté setting. Add the bacon and cook until crisp. Add the onion and sauté until softened, about 3 minutes. Add the garlic and sauté for 1 minute more. 2. Add the black-eyed peas, broth, smoked paprika, chili powder, cumin, and garlic powder. Stir to combine. 3. Lock the lid into place and set the pressure cooker to high pressure for 10 minutes. Quick release the pressure. 4. Carefully remove the lid and check the peas for doneness. If they are not done, lock the lid back into place and cook for an additional 2-3 minutes. 5. When the peas are done, season with salt and pepper to taste. Serve hot with hot sauce, if desired.

Notes

Be sure to read the instructions for your specific pressure cooker before use. Cook on low for 6-8 hours or on high for 3-4 hours.
