Slow Cooker Meatball Sub Recipe

Ingredients
For the meatballs:
- 2 pounds ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese

- 1/4 teaspoon black pepper
- 2 eggs
For the sauce:
- 2 cups marinara sauce
- 1/2 cup beef broth
- 1 teaspoon Italian seasoning
- 1 teaspoon sugar
For the sandwiches:
- 4 hoagie rolls
- 8 slices provolone cheese
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley, for garnish (optional)
Instructions
1. In a large bowl, combine the ground beef, bread crumbs, Parmesan cheese, garlic, Italian seasoning, salt, pepper, and eggs. Use your hands to mix everything together until it’s fully combined.
2. Roll the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet. Place the baking sheet in the refrigerator to chill for 30 minutes.
3. Spray the bottom of the slow cooker with non-stick cooking spray. Add the marinara sauce, beef broth, Italian seasoning, and sugar. Stir to combine.
4. Add the meatballs to the slow cooker and gently stir until the meatballs are coated in the sauce.
5. Cover and cook on low for 4-6 hours.
6. Preheat the oven to 375°F. Place the hoagie rolls on a baking sheet and top each roll with 2 slices of provolone cheese. Bake for 5-8 minutes until the cheese is melted and the rolls are lightly toasted.
7. To assemble the sandwiches, place some of the meatballs on the bottom half of each roll. Top with some of the sauce and sprinkle with Parmesan cheese. Place the other halves of the rolls on top.
8. Serve warm and garnish with chopped fresh parsley, if desired.
