Ingredients

For the brisket:

  • 4-5 pounds brisket, trimmed of excess fat
  • 4 tablespoons olive oil
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons smoked paprika
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 2 onions, thinly sliced
  • 2 carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef stock
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • 3 tablespoons unsalted butter, melted

Instructions

1. Preheat oven to 325 degrees Fahrenheit. Pat brisket dry with paper towels and season all over with salt and pepper.

2. In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat. Add the brisket and sear until browned on both sides, about 5 minutes per side.

3. In a small bowl, combine the remaining 2 tablespoons of olive oil with the black pepper, smoked paprika, garlic powder, onion powder, oregano, thyme, cumin, and coriander. Rub this mixture all over the brisket.

4. Place the onions, carrots, and garlic in the bottom of a large roasting pan. Place the brisket on top. Pour the red wine and beef stock into the pan. Add the tomato paste, Worcestershire sauce, bay leaf, thyme, and oregano. Cover the pan tightly with aluminum foil.

5. Place the roasting pan in the preheated oven and cook for 3 hours. Uncover and brush the brisket with the melted butter. Return to the oven, uncovered, and cook for an additional 30 minutes.

6. Remove the brisket from the oven and let it rest for 15 minutes before slicing. Serve with the pan juices spooned over the top.

Notes

If you don't have a roasting pan, you can use a large Dutch oven. Be sure to use a pot that can go into the oven. You can also use a slow cooker to make this recipe. Place all of the ingredients in the slow cooker and cook on low for 8 hours or until the brisket is tender.
