Ingredients

For the marinade:

  • 2 tablespoons of vegetable oil
  • 1 onion, diced
  • 1 tablespoon of freshly grated ginger
  • 1 tablespoon of garlic paste
  • 2 tablespoons of tomato paste
  • 1 cup of tomato puree
  • 1/4 cup of heavy cream
  • 1 teaspoon of cumin
  • 1 teaspoon of coriander
  • 1/2 teaspoon of garam masala
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon of salt

Instructions

1. In a large bowl, combine all of the marinade ingredients and mix well. Add the cubed lamb and mix until the lamb is evenly coated. Cover the bowl and place in the refrigerator for at least 30 minutes.

2. Heat the oil in a large skillet over medium-high heat. Add the diced onion and cook until the onion is soft and beginning to brown, about 4 minutes. Add the ginger and garlic and cook until fragrant, about 30 seconds. Add the tomato paste and cook for 1 minute. Add the tomato puree and bring to a simmer. Reduce the heat to low and simmer for 10 minutes.

3. Transfer the marinated lamb and the sauce to a 6-quart slow cooker. Stir to combine. Cover the slow cooker and cook on low for 6 hours, or until the lamb is tender.

4. When the lamb is cooked, stir in the heavy cream. Taste and adjust the seasoning, if necessary. Serve over basmati rice, naan bread, or flatbread.
