Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.

2. To make the crust, combine the flour, salt, and sugar in a large bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Slowly add the cold water, a tablespoon at a time, mixing until the dough just holds together.

3. Roll out the dough on a lightly floured surface to about 1/8-inch thickness. Place the dough in the greased pie dish and press the dough firmly into the sides and bottom. Trim any excess dough from the edges. Prick the bottom of the crust with a fork.

4. Put the sweet potatoes in a large pot and fill with enough water to cover. Bring to a boil and cook for 20 minutes, or until the sweet potatoes are tender. Drain the potatoes and mash in a bowl. Add the sugars, eggs, melted butter, vanilla, cinnamon, nutmeg, ginger, allspice, and salt. Mix until smooth.

5. Pour the sweet potato mixture into the prepared pie crust. Bake for 40-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

6. Let cool before serving.
