Ingredients

For the pickling marinade:

Instructions

1. Preheat the oven to 300 degrees F. Make the pickling marinade by combining the apple cider vinegar, brown sugar, liquid smoke, Worcestershire sauce, garlic powder, black pepper, ground ginger, paprika, and onion powder in a medium bowl and whisking together until combined. Set aside.

2. Trim fat from the brisket and season with salt and pepper. Heat the olive oil in a large oven-proof pot over medium-high heat. Once the oil is hot, add the brisket and sear on both sides until golden brown, about 3 minutes per side. Remove the brisket from the pot and set aside.

3. Pour the pickling marinade into the pot and bring to a simmer. Place the brisket back into the pot, making sure it is completely covered with the marinade. Place the lid on the pot and transfer to the preheated oven. Cook the brisket for 3-4 hours, or until the internal temperature reaches 160 degrees F.

4. Remove the brisket from the pot and let rest for 10 minutes before slicing. Serve the pickled brisket cold or warm, with the remaining pickling marinade.

Notes
