This slow cooker chicken tortilla soup is the perfect combination of healthy and flavorful. It’s packed with chicken, vegetables and some great seasonings for a comforting soup. Plus, it’s easy to make in the slow cooker, making it a great meal for busy weeknights. Serve it with tortilla chips, cheese, avocado, sour cream and cilantro for a complete meal that everyone will love.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 3 cups chicken broth
  • 1 (14.5 ounce) can fire-roasted tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 2 cups cooked, shredded chicken
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • 2 cups tortilla chips, crushed
  • 1/2 cup shredded cheese
  • 1 avocado, diced
  • Sour cream, for serving
  • Fresh cilantro, for garnish

Instructions

In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, chili powder, paprika and oregano and cook for another minute. Add the mixture to the slow cooker.

Add the chicken broth, tomatoes, beans, corn, chicken, cilantro and season with salt and pepper to taste. Stir to combine.

Cover and cook on low for 4-6 hours or on high for 2-3 hours. Once done cooking, stir in the crushed tortilla chips.

To serve, divide the soup between bowls and top with cheese, avocado, sour cream and cilantro.

Notes

This soup is great for meal prepping. You can store it in an airtight container in the refrigerator for up to four days. When ready to serve, just reheat in the microwave or on the stove.

If you don’t have fresh cilantro, you can substitute with 1 teaspoon of dried cilantro.
