Ingredients

2 pounds of diced ham 2 tablespoons of olive oil 1 large onion, diced 3 cloves of garlic, minced 4 cups of chicken broth 4 large potatoes, peeled and diced 1 teaspoon of thyme 1 teaspoon of oregano 1 teaspoon of rosemary Salt and pepper to taste

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the diced ham and cook until golden brown, about 5 minutes. Transfer the ham to a slow cooker. 2. Add the onion and garlic to the skillet and cook until softened, about 2 minutes. Transfer the onion and garlic to the slow cooker. 3. Add the chicken broth, potatoes, thyme, oregano, rosemary, salt, and pepper to the slow cooker. Stir to combine. 4. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours. 5. Serve the soup warm with your favorite toppings.

This recipe can be easily adapted to fit any dietary needs. For a vegan version, substitute the ham with mushrooms or tofu, and use vegetable broth instead of chicken broth. For a lower-carb version, omit the potatoes and add additional vegetables such as cauliflower, celery, or carrots. This soup can also be made on the stovetop. Just follow the same instructions, but cook in a large pot over medium-low heat for 30-45 minutes, or until the potatoes are tender.
