Ingredients

2 pounds of beef chuck roast, trimmed of fat

1 large onion, diced

2 cloves of garlic, minced

2 tablespoons of olive oil

1 can of beef consomme

1 cup of beef broth

2 tablespoons of Worcestershire sauce

1 teaspoon of dried thyme

2 bay leaves

Salt and pepper to taste

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the beef chuck roast and brown on all sides. Transfer the roast to the slow cooker.

2. In the same skillet, add the onions and garlic and cook until softened, about 5 minutes. Transfer the onion and garlic to the slow cooker.

3. Pour the beef consomme, beef broth, Worcestershire sauce, thyme, and bay leaves over the beef and vegetables.

4. Cook on low heat for 8-10 hours or high heat for 4-5 hours, until the beef is tender and easily shreds with a fork.
