Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

2 pounds boneless, skinless chicken thighs

1 teaspoon dried thyme

1 teaspoon dried oregano

6 cups chicken broth

1 bay leaf

1/4 teaspoon freshly ground black pepper

1/2 cup uncooked white rice

1 cup frozen peas

1/4 cup freshly chopped parsley, for garnish

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes. Add the carrots and celery and cook for another 3 minutes. Add the chicken thighs and cook until lightly browned, about 5 minutes.

2. Transfer the chicken and vegetables to a 6-quart slow cooker. Add the thyme, oregano, chicken broth, bay leaf, and black pepper. Cover and cook on low for 4 to 5 hours, or until the chicken is cooked through and the vegetables are tender.

3. About 15 minutes before serving, add the rice and peas to the slow cooker. Cover and continue to cook for 15 minutes, or until the rice is tender. Discard the bay leaf and adjust the seasoning, if necessary.

4. Serve the soup hot, garnished with the freshly chopped parsley.

Notes
