This clean chili recipe is a slow cooker version of a classic favorite. It’s made with lean ground beef, kidney beans, and plenty of vegetables. This chili is not only tasty, but it’s healthy too! It’s perfect for a weeknight dinner, or to make ahead and freeze for later. This chili is sure to become a family favorite!

Ingredients

1 lb. lean ground beef

1 onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14 oz.) kidney beans, rinsed and drained

1 can (14 oz.) diced tomatoes

1 can (6 oz.) tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon pepper

Instructions

1. In a large skillet, cook the ground beef until no longer pink. Add the onion and garlic and cook for an additional 3 minutes. Drain off any excess fat.

2. Transfer the beef mixture to a slow cooker. Add the bell peppers, beans, tomatoes, tomato paste, chili powder, cumin, oregano, salt, and pepper.

3. Stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

4. Serve hot with your favorite toppings, such as cheese, sour cream, or green onions.

Notes

• This chili can also be cooked on the stovetop. Simply cook the beef, onion, and garlic in a large pot over medium heat until the beef is no longer pink. Add the remaining ingredients and simmer for 30 minutes. Adjust seasonings to taste.

• For a thicker chili, add 1/4 cup of masa harina or cornmeal when adding the remaining ingredients. Simmer for an additional 15 minutes.

• For a spicier chili, add 1/4-1/2 teaspoon of cayenne pepper or red pepper flakes when adding the remaining ingredients.

• Feel free to customize this chili by adding additional vegetables, such as carrots, celery, or corn.
