Instructions

1. Wash the basmati rice and soak it in water for 15 minutes. Drain and keep aside.

2. Heat the oil in a pressure cooker. Add the cumin seeds and let them sizzle. Add the chopped onion and sauté till it turns golden brown.

3. Add the ginger, garlic, and green chilies and sauté for a few seconds. Now add the diced carrots, potatoes, and bell peppers and sauté for 2 minutes.

4. Add the drained rice, turmeric powder, garam masala powder, and salt to taste. Mix everything together and sauté for 2 minutes.

5. Add the green peas and 3 cups of water. Close the lid of the pressure cooker and cook on high heat for 2 whistles. Reduce the heat to low and cook for 5 minutes.

6. Turn off the heat and let the pressure release naturally. Open the lid of the pressure cooker and fluff the pulao with a fork.

7. Serve the vegetable pulao hot with raita or yogurt.
