Description

Ropa Vieja is a traditional Cuban dish consisting of shredded beef, stewed in a flavorful tomato sauce and served with white rice. The name of the dish means “old clothes”, as the shredded beef resembles a pile of old clothing. This dish is popular in many Latin American countries and is a favorite among Cuban immigrants. You can make this delicious dish in a pressure cooker in just a few hours, making it a great weeknight meal.

Ingredients

  • 1 pound beef chuck roast
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped fresh cilantro
  • Cooked white rice, for serving
  • Lime wedges, for serving

Instructions

1. Start by seasoning the beef chuck roast with the garlic powder, cumin, smoked paprika, oregano, salt, and black pepper. Rub the seasoning into the roast to ensure that it is evenly coated.

2. Heat a few tablespoons of oil in the pressure cooker over medium-high heat. Once the oil is hot, add the beef chuck roast and brown it on all sides. Remove the roast from the pressure cooker and set aside.

3. Add the diced onion, bell pepper, jalapeno, and garlic to the pressure cooker. Saute until the vegetables are soft and fragrant. Add the diced tomatoes, beef broth, Worcestershire sauce, and apple cider vinegar to the pressure cooker. Stir to combine.

4. Place the beef chuck roast back into the pressure cooker. Lock the lid in place and set the pressure cooker to high pressure. Cook for 45 minutes. When the cooking time is up, allow the pressure to release naturally.

5. Carefully remove the lid from the pressure cooker. Remove the beef chuck roast from the pressure cooker and shred with two forks. Return the shredded beef to the pressure cooker and stir to combine with the sauce.

6. Serve the Ropa Vieja over white rice and garnish with cilantro and lime wedges. Enjoy!

Equipment

  • Pressure cooker
  • Large skillet
  • Two forks

Notes

You can substitute the beef chuck roast for flank steak or skirt steak. You can also use boneless, skinless chicken thighs instead of beef. For a vegetarian version, substitute the beef for black beans or lentils.
