Description

This recipe for electric pressure cooker baked beans is a quick and easy way to make a delicious side dish or main course. The combination of canned and dried beans give these beans a nice texture, and the smoky bacon, brown sugar, and other seasonings make them flavorful and savory. Serve these beans along with your favorite grilled meats, or enjoy them as a hearty vegetarian meal.

Ingredients

  • 1 cup dried navy beans
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced smoked bacon
  • 1/2 cup packed brown sugar
  • 1/4 cup tomato paste
  • 1/4 cup molasses
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dry mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 2 cups vegetable or chicken broth

Instructions

1. Begin by rinsing the dried beans and picking out any stones or debris. Place the beans in a large bowl and cover with cold water. Allow the beans to soak for at least 8 hours or overnight. Drain and rinse the beans before using in the recipe.

2. Heat the pressure cooker over medium heat and add the bacon. Cook until the bacon is crisp, about 6-8 minutes. Add the brown sugar and tomato paste and cook for another 2 minutes, stirring to combine. Add the molasses, Worcestershire sauce, dry mustard, garlic powder, smoked paprika, and salt and stir to combine. Add the beans, broth, and 2 cups of water. Stir to combine.

3. Secure the lid on the pressure cooker and set the valve to “sealing.” Cook on high pressure for 30 minutes. When the cooking time is up, use the quick release method to release the pressure. Carefully remove the lid and stir the beans. If the beans are not soft enough, secure the lid and cook for an additional 10 minutes.

4. Serve the beans hot with your favorite grilled meats or as a main dish. Enjoy!

Equipment

  • Electric Pressure Cooker

Notes

Be sure to rinse and pick through the dried beans before soaking. If there are any stones or debris, they need to be removed before cooking. If you find that the beans are not soft enough after cooking, you can add a little more water and cook for an additional 10 minutes.
