Ingredients

2 cups fresh pinto beans

1/2 teaspoon black pepper

3 cups vegetable broth or water

Instructions

1. Begin by rinsing and sorting the pinto beans. Discard any broken beans or debris. Place the beans in a large bowl and cover with cold water. Let the beans soak overnight or at least 8 hours. Drain and rinse the beans before cooking.

2. Heat the olive oil in a large pot over medium-high heat. Once the oil is hot, add the onion and garlic. Sauté for 3-4 minutes, until the onion is softened and fragrant.

3. Add the cumin, smoked paprika, chili powder, oregano, salt, and pepper. Stir to combine. Sauté for 1-2 minutes until the spices are fragrant.

4. Add the drained and rinsed pinto beans to the pot. Pour in the vegetable broth or water. Stir to combine.

Notes
